Literally translated as “foreign spice,” blue fenugreek (called “utskho suneli” in Georgia) grows wild in the mountains of northern Georgia. It is very hard to find in the United States, but is a crucial component in Georgian food. It is used to add an earthy and mildly spicy flavor to a variety of foods, including bazha (walnut sauce) and satsivi (chicken with walnuts).
